I have worked for 6.5 years under employment visas in Hong kong and now have opportunity outside.
1) Can my wife and son stay on till the school year ends in June though I resign and leave HK by Jan.
2) Is there a way I can manage a PR ( 6 months left to make 7 years) by setting up a company or other means to maintain my residency. My wife and son will stay on for another 6 months in house rented by me if allowed, even though I leave for a job outside Hong Kong and visit once in a while

No because your wife and sons dependency are based on your employment visa and once that is gone then they cease to be dependents.
Setting up a company is an option, and then you would need to apply for a work visa in your name again, but the business plan would need to be sound with plans to employ locals, etc before immigration would allow a visa to be granted. This could take several months to set up and do.
Johnny, there may be a way to get your PR. We are handling a case very similar to yours at the moment. Can you please email me and I will contact you and speak to you. It very much depends on where you are working at the moment and if you can get your visa extended, even though you're planning to leave. If you work for a big corporate company, this may be possible.
